ROLLING OUT THE GOOD TIMES: Hightower launches ’personalized’ mobile charcuterie bar cart

SPRINGFIELD – Sabrina Hightower moved to Oregon 15 years ago and changed her life. She transitioned from being a stay-at-home mom for 12 years to running a family business with her husband and children involved. Charcuterie Bar Creations offers a personalized selection of individually served charcuterie creations.

Relocating from California, Hightower initially moved to Oregon to care for her family with her husband and three-year-old daughter. Her family expanded with the addition of her son, and the crew struck home in Springfield. Fast forward 15 years, and now she is catering events and special occasions with her mobile charcuterie bar.

“I needed to do something for me, it’s time. The kids are old enough. Let me try to get out of the house and do something fun,” Hightower said when she realized she was ready for a lifestyle change.

Inspiration

Back in May 2025, inspiration hit when Hightower saw a woman in Arizona working a similar concept. With her husband’s help, Hightower brought ideas to life by handcrafting a mobile cart to serve individual charcuterie cups and boards at special events.

“I just started doing research. I thought it was really unique. Nobody does it individually, served on their own little charcuterie board. I started looking into it, and then I talked to my husband, who started building the cart, and I’ve done all the research. We’ve done it from the ground up. I did all the forms, business cards, all that stuff,” Hightower said.

From May to October, Hightower saw her vision come to life.

“She has so many great ideas, and you can see how quickly they’re moving through her mind. When she gets one, she just runs with it,” said sister-in-law Amanda Robertson.

Occasionally referred to as Lane County’s first individually served Mobile Charcuterie Bar, Hightower offers a personalized meat and cheese experience through her business. Twelve-ounce charcuterie cups are available and can be delivered to, say, corporate events. Package deals, such as single-serve or bottomless options, are also available for catered events.

“Mine’s more personable than just coming up and grabbing food and going at it like a buffet,” she said.

She also noted the lack of sanitization that might come with a buffet-style setup. “If you’ve got food lying out on a table and people are picking at it or sneezing, it’s just not very sanitary.” Her cart has individual food trays kept on ice, under plastic covers.

Personal approach

Folks can get a personalized quote from Hightower based on their selection of meats, cheeses, fruits, vegetables, olives, nuts, dried fruit, and spreads. She said pricing depends on the type of package, the selection of food, how many people are being served, and the event location.

“I want to eventually get to the point where my husband doesn’t have to work, and we can just do this family thing full-time,” she said. “I would love to be able to offer more things, not to mention maybe make a few more carts and have a couple of employees.”

Hightower has a wedding booked in July that she hopes is the first of many.

“I hope that she has all of the successes that she deserves. I hope this thing takes off and she’s so busy that she doesn’t even know what to do,” Robertson said.
