Zucchini Hummus – Cheryl’s Kitchen

Zucchini Hummus

Here come the zucchinis! This recipe will become one of your favorites if you like hummus. It’s lighter and fresh-tasting.
Most folks I’ve served it to had no idea it has zucchini as the main ingredient.

Ingredients
4 cups organic raw zucchini, chopped
1/3 cup tahini (sesame paste)
Two large lemons, zested and then juiced
1/4 cup olive oil
4 to 5 cloves garlic, minced
1½ teaspoons pink Himalayan sea salt
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon cayenne pepper

Directions

Combine all ingredients in a blender and puree, using the pulse button. Blend until thick and smooth.
Lasts about 7 days in the fridge.
