Cheryl’s Kitchen – Quick and delicious cream of tomato soup

Serves four
6 large fresh tomatoes chopped
3 slicks of celery chopped up
One whole yellow onion chopped
½ yellow or red pepper chopped
One large carrot chopped
very small
3 cloves of garlic chopped fine
Fresh herbs such as basil, parsley, thyme, rosemary.. Whatever you have on hand. Our favorite is fresh basil. A couple of tablespoons of each.
3 cups veggie stock
3 cups water
1 teaspoon of salt and pepper
2 tablespoons of honey
One can of coconut milk
Put all ingredients in a medium saucepan and bring to boil. Simmer on medium high heat for 30 minutes. After 30 minutes carefully place hot soup in the blender and slowly blend until smooth. You need to be extremely careful when dealing with hot liquid. Start your Vitamix or blender on low and slowly build up speed.
Pour soup back in the pan and bring back to the heat. Add the can of coconut milk and honey. Stir well.
