Energy Bites

1 cup rolled oats

½ cup chocolate chips

½ cup flaxseed meal

½ cup toasted coconut flakes

¾ cup crunchy peanut butter*

1/8 cup agave sweetener or honey

1 teaspoon vanilla extract

1 teaspoon chili powder

1 teaspoon cinnamon powder


Combine all ingredients together in a bowl. Form into one-inch balls. Arrange on a baking sheet and chill for about an hour. Transfer into an airtight container.

You can find flaxseed meal just about anywhere these days. It is a powerhouse ingredient that is rich in Omega-3 fats and dietary fiber and high in Protein. These Energy Bites are perfect for a breakfast on the go or as a midday snack for adults and kiddos.

*If the mixture looks a little dry as you are rolling the bites, just add another tablespoon of peanut butter.
