Cheryl's Kitchen - Quick and delicious cream of tomato soup

Serves four

6 large fresh tomatoes chopped

3 slicks of celery chopped up

One whole yellow onion chopped

½ yellow or red pepper chopped

One large carrot chopped

very small

3 cloves of garlic chopped fine

Fresh herbs such as basil, parsley, thyme, rosemary.. Whatever you have on hand. Our favorite is fresh basil. A couple of tablespoons of each.

3 cups veggie stock

3 cups water

1 teaspoon of salt and pepper

2 tablespoons of honey

One can of coconut milk


Put all ingredients in a medium saucepan and bring to boil. Simmer on medium high...
