Preserving food in southern Lane County

Fall is here, and with it is a bounty of activities that can be done with friends and family. Fermentation and preserving are ideal fall projects for bringing in the bounty of the valley. Preservation allows for the continuation in use of the nourishing fruits and veggies that have been grown or purchased from local farms during the cold winter months. The process is not only fun, but healthy, because the final product is full of nutrition and important enzymes needed by the body, andis best sourced from the food eaten.
