Bistro owners plan to come out stronger

For the foreseeable future, the Creswell Blue Valley Bistro will be open Tuesday through Saturday from 8 a.m.- 3 p.m. for drive-through only with a limited breakfast menu and lunch menu due to short supply and being short-staffed. Espresso 58 in Pleasant Hill remains open from 6 a.m.- 6 p.m. daily.

“In some ways, this is the most stressful thing I’ve had to do in my life,” owner Seth Clark said. “However, Melissa and I bought this business in the midst of a recession, and for the past 10 years have been digging deep to come out on top. I’m not ready to throw in the towel yet, and regardless of the outcome, I know she and I will come out stronger on the other end.” 

“I’m sure there are more lessons to come, but if I had to say I’ve learned anything, it’s been a lesson in humility. I have seen so much support through this process from caring friends and family, that at times I’ve been overwhelmed. It’s surprising the number of lives we’ve touched and how those very people are stepping up to show their support.

“I cannot stress enough our gratitude for the outpouring of support we’ve received from our loving customers. You have touched our souls.”
